Chef's Knife
You will use The Cook's Knife, also known as the Chef's Knife, for difficult jobs like dicing food. It ranges between 6 and 12 inches in length. You'll find that the blade is curved, which will help you perform tasks on the cutting board. Think of it as the "work horse" knife. The Bread Knife

The Paring Knife

The Cleaver

The Boning Knife
As you may have guessed, or known, you'd use a Boning Knife to remove bones from cuts of meat. Unlike the above mentioned cleaver, which cuts through bone, the boning knife worms its way into small places and literally "ejects" the bone from the meat. It's about 6 inches long.
The Fillet Knife
A Fillet Knife is a longer version of the boning knife, about 10 inches, used to, you guessed it, fillet fish.
